For Anne-Marie Lavaysse and her son Pierre, on their land in the Minervois, natural wine suffers no restrictions: it is first and foremost a philosophy of life, one that puts harmony and freedom at the forefront of the agricultural process.

Between Anne-Marie Lavaysse (and her son Pierre) and nature, the relationship is based on one word: harmony. In her vineyards, her vegetable garden or her orchard, everything breathes a balance that is transmitted to the products of the farm where perfect nature reigns. Initially a mixed farmer, Anne-Marie acquired vines in 1993-94, 5 hectares on the Saint-Jean-de-Minervois terroir with limestone soil ideal for the finest Muscat (small grapes), but also for Grenache, Carignan, Cinsault, and various red grape varieties that are not widely used or not very highly valued, such as Aramon or Terret Rose. It quickly moved from the cooperative to making its own wines in 1999. She does not use any treatment products, not even sulphur and copper to combat vine diseases, and she practices a very free biodynamic method based on plants. It is the vine's capacity for self-defence that regulates the health of the vines and makes it possible - at very low yields (10/12 hl/ha) - to harvest the healthy and ripe grapes that are essential for free and natural vinification, without intervention. The result is pure, luminous wines full of energy.
