A true icon of natural wine, Bernard Bellahsen created his estate in the heart of the Coteaux du Languedoc, in Caux, north of Pézenas (Hérault), at a place called Fontarèche: a real farm that fully practices biodynamics (certified in 1993) with not only vines (3 ha), but also horses for ploughing - Bernard Bellahsen is a master of animal traction - and meadows for hay, and fields of wheat to produce flour and bread. The limestone and basalt soils of the terraces are planted with Grenache, Carignan and Syrah, with a few additional grape varieties. At the Fontedicto estate, cultivation and vinification are carried out at a natural pace, without forcing nature with inputs or interventions that would disrupt it. The wine is aged in barrels and then in vats until it reaches a stable balance.
