Cossard Frédéric - Domaine de Chassorney
BURGUNDY
With his two entities, Domaine de Chassorney and the Frédéric Cossard label, this Saint-Romain-based winemaker has succeeded in promoting a vision of Burgundy that breaks with the harmful practices of the past. He produces whites and reds from the Côte-de-Beaune but also from the Côte-de-Nuits, imbued with a very natural elegance and purity.
The profession of Burgundy wine broker, which he exercised for 10 years, allowed Frédéric Cossard to deepen his knowledge of the terroirs... and to forge a critical approach to the dominant farming and enological practices. The opportunity to pruchase a few vines – mainly in Saint-Romain and Auxey-Duresses – made him a winegrower in 1996. Domaine de Chassorney gradually grew, notably in 2000 with vines in Corpeau in villages-level Burgundy, then in Savigny. To broaden their palette of terroirs, Frédéric and Laure Cossard created the SARL Frédéric Cossard, which sources supplies of grapes from renowned appellations and crus (Meursault, Puligny and Chassagne-Montrachet, Nuits-Saint-Georges, Chambolle-Musigny, Morey -Saint-Denis, Vosne-Romanée, Beaune…) on the basis of strict specifications contracted with the winegrowers. In 2010, the estate grew from 5 to 10 hectares whenthe couple bought plots in Volnay and Pommard as well as in Hautes-Côtes-de-Beaune. All of these vines are cultivated with the greatest respect for the land and the plant: no chemicals (apart from sulfur and copper against diseases), tillage, homeopathic treatments based on essential oils. The same philosophy presides in the cellar: indigenous yeasts, no sulphur, no thermoregulation. Thus are born wines that are as natural as possible, a range of whites and reds that are among the most exciting in all of Burgundy, and also among the most sought after.
