An unclassifiable winemaker within the Catalan vineyards, Ton Rimbau is distinguished by original experimental practices, both in cultivation and in winemaking and ageing. In Vilobí del Penedès, in the heart of the Penedès in Catalonia, to the west of Barcelona, Ton Rimbau signs a production - called Porcellanic - mainly made from the Xarel.lo grape variety and which is distinguished by exceptional experimental practices in the vineyard like in the cellar. He practices permaculture-type organic farming: no ploughing, the grass is rolled to form a protective carpet for the soil, the vines form an ecosystem that functions like a forest, with the presence of auxiliary animals (spiders) against various attacks, and he uses neither copper nor sulphur. The harvest is done at high maturity, and the fermentations are carried out in vats and/or barrels before being placed in ceramic bottles – protection against light – which complete the aging in immersion in water – protection against variations. of temperature.
